- 1 package Shirakiku Mochi
- 1 pint vanilla ice cream
- Cornstarch for dusting
- Optional toppings: red bean paste, matcha powder
- Thaw mochi according to package instructions
- Dust work surface with cornstarch
- Roll out mochi to 1/4-inch thickness
- Cut into circles using a cookie cutter
- Place a scoop of ice cream in the center of each circle
