Ingredients
  • 1 package Shirakiku Mochi
  • 1 pint vanilla ice cream
  • Cornstarch for dusting
  • Optional toppings: red bean paste, matcha powder
Instructions
  1. Thaw mochi according to package instructions
  2. Dust work surface with cornstarch
  3. Roll out mochi to 1/4-inch thickness
  4. Cut into circles using a cookie cutter
  5. Place a scoop of ice cream in the center of each circle
  6. Fold mochi around ice cream
  7. Freeze for 1 hour
  8. Serve with optional toppings
